Pumpkin Cake recipe

This pumpkin cake is light, moist, and perfectly sweet. The recipe calls for enough ingredients to make two loaves - sure, you could halve the recipe to just make one cake, but trust us, you will want both.

Ingredients:

4 medium eggs
2 cups sugar
1 ½ cups pumpkin
1 cup (2 sticks) butter, softened
3 ½ cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
½ teaspoon salt
½ teaspoon powdered ginger
½ teaspoon cloves
1 ½ cups chocolate chips
1 ½ cups walnuts

Directions:

  1. Preheat oven to 375°F.

  2. In a large bowl, cream eggs, sugar, pumpkin, and butter.

  3. In another large bowl, sift together flour, baking soda, cinnamon, nutmeg, salt, ginger, and cloves. Add to egg mixture and stir until combined. Stir in chocolate chips and walnuts.

  4. Pour mixture into two greased 9-by-5-inch loaf pans. Bake 60 minutes, or until a toothpick inserted in the middle comes out clean. Remove from oven and cool slightly.
